The welcome dinner in our restaurant pays homage to perhaps the most important delicacy Tuscany has to offer: the olive. We start with an olive oil tasting and show you in several courses what this fruit has to offer. We feel committed to the long cultural-historical importance of the olive. In fact, our ancestors in the Neolithic Age, 9000 years ago, were already gathering wild olives. The agricultural cultivation of olives began about 4000 years ago in the Fertile Crescent. We like the legend that Athena, the goddess of wisdom and favourite daughter of Zeus, was involved in this. It is said that she rammed her lance into the ground, from which the first olive branch sprouted. We also like the symbolism of the olive tree as a sign of peace, for example in the UN flag.
